Chicken tortilla soup is a delicious and flavorful Mexican-inspired dish made with shredded chicken, vegetables, beans, and spices, topped with crispy tortilla strips, avocado, cheese, and a squeeze of lime.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can diced tomatoes (14 oz)
  • 4 cups chicken broth
  • 2 cups cooked chicken shredded
  • 1 can can black beans (15 oz) drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • Salt and pepper to taste

  • crushed tortilla chips
  • shredded cheese
  • diced avocado
  • fresh cilantro
  • lime wedges

Method
 

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened.
  2. Stir in cumin and chili powder, cook for another minute until fragrant.
  3. Add diced tomatoes, chicken broth, shredded chicken, black beans, and corn to the pot. Bring to a simmer and let it cook for about 15-20 minutes.
  4. Season with salt and pepper to taste.
  5. Serve the soup hot, topped with crushed tortilla chips, shredded cheese, diced avocado, fresh cilantro, and a squeeze of lime juice.
  6. Enjoy!
