Prepare liver:

  • While semi-frozen remove capsule from liver and cut liver into 1/2 " cubes and wash. Add seasoning salt, black pepper, garlic, thyme, bell pepper and onion. Mix well.
  • Add in small portion Grace® Browning to desired color. Mix well.
  • Marinate in refrigerator for 30 minutes.

Prepare hot water to tenderize liver:

  • Add 2 cups water to a pot and boil. Use hot water to soften liver and for gravy.

Cook liver:

  • To a frying pot add vegetable oil and when hot pour in liver mixture and stir fry.
  • When liver changes color add boiling water and cook liver until tender, about 30 minutes.
  • Add Scotch bonnet pepper and a dash of ginger. Simmer for another 5 minutes.
  • Serve with potatoes, rice, bread, boiled dumplings or boil green bananas.
