In a bowl, marinate the turkey pieces with soy sauce, sesame oil, minced garlic, and ginger. Let it sit for about 15-20 minutes.
Heat vegetable oil in a wok or large skillet over medium-high heat.
Add the marinated turkey to the hot pan and stir-fry until browned and cooked through, about 5-7 minutes. Remove the turkey from the pan and set aside.
In the same pan, add more vegetable oil if needed and stir-fry the bell peppers, broccoli, snap peas, and carrots until they are slightly tender but still crisp, about 3-4 minutes.
Return the cooked turkey to the pan and stir everything together. Season with salt and pepper to taste.
Serve the turkey stir-fry hot over cooked rice or noodles.
