Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the flour and sugar. Add the cold, cubed butter, and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
Add the egg yolk to the mixture and continue mixing until the dough comes together. If needed, add a tablespoon of cold water to help bind the dough.
Once the dough is formed, press it into the bottom and sides of a tart pan, creating an even layer. Make sure to press the dough firmly, but not too hard.
Spread the raspberry jam evenly over the bottom of the crust.
Arrange the fresh raspberries on top of the jam, pressing them lightly into the jam.
Place the tart in the preheated oven and bake for approximately 25-30 minutes, or until the crust turns golden brown and the raspberries are soft.
Once baked, remove the tart from the oven and let it cool completely.
Before serving, you can dust the tart with powdered sugar for a decorative touch. Optionally, you can also serve it with a dollop of whipped cream or a scoop of vanilla ice cream.
