Cook the chow mein noodles according to package instructions. Drain and set aside.
In a large wok or skillet, heat vegetable oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the pan and set aside.
In the same pan, add a bit more oil if needed and stir-fry the garlic and ginger until fragrant, about 1 minute.
Add the mixed vegetables and stir-fry until slightly tender, about 3-4 minutes.
Return the shrimp to the pan and add the cooked chow mein noodles.
In a small bowl, mix together soy sauce, oyster sauce, and sesame oil. Pour the sauce over the noodles and shrimp. Stir well to combine and coat everything evenly.
Season with salt and pepper to taste.
Cook for another 2-3 minutes until everything is heated through.
Serve the Shrimp Chow Mein hot, garnished with chopped green onions and sesame seeds.
