Flatten each portion of sausage into a thin layer in your hand.

Roll each sausage-covered egg in flour, then dip in the beaten egg, and finally coat with breadcrumbs.
Heat oil in a deep fryer or large pan to 350°F (180°C).
Carefully place the Scotch eggs into the hot oil and fry for about 6-8 minutes until the sausage is cooked through and the breadcrumbs are golden brown.
Remove the Scotch eggs from the oil and drain on a paper towel.
