In a large pot, heat some olive oil over medium heat. Add the diced onion and garlic and sauté until fragrant.
Add the diced pumpkin to the pot and cook for a few minutes until slightly softened.
Stir in the rice and cook for another minute, allowing the rice to toast slightly.
Add the cumin, paprika, salt, and pepper to the pot and mix well.
Pour in the vegetable or chicken broth and bring to a simmer. Cover the pot with a lid and let it cook for about 15-20 minutes, or until the rice is cooked and the pumpkin is tender.
Once the rice is cooked, fluff it with a fork and season with additional salt and pepper if needed.
