Ingredients
  

  • 4 chicken leg quarters or 8 bone-in chicken thighs
  • 1/4 cup peri-peri sauce (store-bought or homemade)
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • fresh parsley chopped for garnish (optional)

Method
 

  1. In a bowl, combine the peri-peri sauce, minced garlic, olive oil, lemon juice, salt, and pepper. Mix well to create the marinade.
  2. Place the chicken pieces in a large dish or resealable plastic bag and pour the marinade over them, ensuring the chicken is well coated. Marinate in the refrigerator for at least 2 hours or overnight for best flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and grill for about 20-25 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. Serve the peri-peri chicken hot, garnished with chopped fresh parsley if desired.
