Preheat your oven to 350°F (180°C).
Clean the duck and pat it dry with paper towels.
Mix the five-spice powder, honey, soy sauce, and rice vinegar in a small bowl to create a marinade.
Brush the marinade over the duck, both inside and out, and let it marinate for at least an hour in the refrigerator.
Place the duck on a rack in a roasting pan and roast in the oven for about 2 hours, or until the skin is crispy and the meat is cooked through.
Remove the duck from the oven and let it rest for a few minutes before carving.
To serve, carve the duck into thin slices and serve with the pancakes, hoisin sauce, cucumbers, and scallions for wrapping.
