  • Clean the pork: Rinse the pork hocks and place them in a large, heavy-bottomed pot or Dutch oven.
  • Begin cooking: Add the water, soy sauce, garlic, bay leaves, peppercorns, and cinnamon stick. Bring to a boil, skimming off any foam that rises to the surface.
  • Simmer: Reduce the heat to low, cover, and simmer for 1½–2 hours, or until the pork is nearly fork-tender. Check occasionally and add a little water if the liquid gets too low.
  • Add the vinegar: Pour in the vinegar. Let it boil uncovered for about 3 minutes without stirring, then stir in the brown sugar and banana blossoms.
  • Finish the dish: Simmer uncovered for another 30–40 minutes, stirring occasionally, until the pork is very tender and the sauce is reduced, glossy, and slightly thick.
  • Adjust seasoning: Taste and add salt, more sugar, or a splash of vinegar as desired. Remove the bay leaves and cinnamon stick.
  • Serve: Serve hot with steamed white rice.
  • For a thicker sauce, remove the tender pork and boil the liquid for 5–10 minutes before returning the pork to the pot.
