Heat oil in a large pot or pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add chopped onions and sauté until they turn translucent.
Add minced garlic and grated ginger, and sauté for another minute.
Add turmeric, coriander powder, cumin powder, red chili powder, and salt. Stir well to combine the spices.
Add chopped tomatoes and cook until they soften and break down.
Add cubed potatoes and sliced okra to the pot. Stir to coat the vegetables with the spice mixture.
Pour in enough water to cover the vegetables. Cover and let it simmer for about 15-20 minutes or until the potatoes are cooked through.
Adjust salt and spice levels to taste.
Garnish with fresh cilantro and serve hot with rice or naan.
