Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a food processor, pulse the mixed nuts until coarsely ground. Be careful not to over-process, as you want a coarse texture.
Transfer the crushed nuts to a shallow dish and mix in the panko breadcrumbs, garlic powder, paprika, salt, and pepper.
Season the Mahi-Mahi fillets with salt and pepper on both sides.
Brush each fillet with a bit of olive oil, then press the fillets into the nut mixture, coating them evenly on both sides.
Place the coated fillets on the prepared baking sheet and drizzle with a little more olive oil.
Bake the Mahi-Mahi in the preheated oven for about 12-15 minutes, or until the fish is cooked through and the nut crust is golden brown and crispy.
Serve the Nut-crusted Mahi-Mahi hot with lemon wedges on the side.
