Kenyan Pilau is a flavorful and aromatic rice dish that is popular in Kenya and other East African countries. It is made with basmati rice, cooked with a blend of spices such as cumin, cardamom, cinnamon, cloves, and others, along with meat (often beef or chicken), vegetables, and sometimes raisins or nuts. The spices give Kenyan Pilau its distinctive taste and rich color.

Ingredients
  

  • 2 cups basmati rice
  • 1 pound beef or chicken, cut into small pieces
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger minced
  • 2 tomatoes chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 4 cardamom pods
  • 1 cinnamon stick
  • 4 cloves
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 4 cups water or beef/chicken broth

Method
 

  1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds, cardamom pods, cinnamon stick, and cloves. Cook until fragrant, about 1-2 minutes.
  3. Add the chopped onion, garlic, and ginger. Cook until the onion is soft and translucent, about 5 minutes.
  4. Add the chopped tomatoes and cook until they start to break down, about 5 minutes.
  5. Add the beef or chicken pieces and brown them on all sides.
  6. Stir in the turmeric powder, ground coriander, salt, and pepper. Cook for another 2-3 minutes.
  7. Add the soaked and drained rice to the pot and stir to coat the rice with the spices.
  8. Pour in the water or broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Once the rice is cooked, fluff it with a fork and serve hot.
