Heat the oil in a large pan or pot over medium heat.
Add the sliced onions and sauté until translucent.
Add the sliced bell peppers and continue to sauté for another 5-7 minutes.
Add the chopped tomatoes, paprika, salt, and sugar to the pan and stir well.
Pour in the water, cover the pan, and let the Lecso simmer for 15-20 minutes until vegetables are tender.
Check the seasoning and add more salt or paprika if needed.
Optional: you can add cooked sausage, smoked meat, or scrambled eggs to the Lecso for more protein.
Serve the Lecso hot with some bread or rice on the side.
