Ingredients
  

  • 4-5 bell peppers sliced
  • 2 onions sliced
  • 4-5 tomatoes chopped
  • 2 tablespoons paprika
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons oil
  • 1/2 cup water
Optional additions:
  • sausage
  • smoked meat
  • Scrambled eggs

Method
 

  1. Heat the oil in a large pan or pot over medium heat.
  2. Add the sliced onions and sauté until translucent.
  3. Add the sliced bell peppers and continue to sauté for another 5-7 minutes.
  4. Add the chopped tomatoes, paprika, salt, and sugar to the pan and stir well.
  5. Pour in the water, cover the pan, and let the Lecso simmer for 15-20 minutes until vegetables are tender.
  6. Check the seasoning and add more salt or paprika if needed.
  7. Optional: you can add cooked sausage, smoked meat, or scrambled eggs to the Lecso for more protein.
  8. Serve the Lecso hot with some bread or rice on the side.
