Dushbara is a traditional Azerbaijani dish consisting of small dumplings filled with minced lamb or beef, onions, and various spices. The dumplings are typically served in a hot broth with a dollop of yogurt or vinegar on top. It's a delicious and comforting dish enjoyed by many in Azerbaijan and beyond!

Ingredients
  

For the dumplings:
  • 1 lb ground lamb or beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 cup fresh parsley chopped
  • 1 package dumpling wrappers
For the broth:
  • 8 cups beef broth or vegetable broth
  • Salt and pepper to taste
  • 2 cloves garlic minced
  • 1 teaspoon dried mint
  • 1 lemon juice

Method
 

  1. In a bowl, mix together the ground meat, onion, garlic, salt, pepper, cumin, paprika, coriander, turmeric, and parsley until well combined.
  2. Place a small amount of the meat mixture in the center of each dumpling wrapper. Fold the wrapper over the meat and pinch the edges to seal, creating small dumplings.
  3. In a large pot, bring the broth to a simmer. Add the garlic, mint, and lemon juice. Season with salt and pepper to taste.
  4. Carefully drop the dushbara into the simmering broth. Cook for about 15-20 minutes, or until the dumplings are cooked through.
  5. Serve the dushbara hot in bowls with some of the broth. You can garnish with extra chopped parsley or a dollop of yogurt if desired.
  6. Enjoy!
