Method

  1. Start by preparing the dressing. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, grated ginger, and sesame oil. Set it aside to let the flavors meld.
  2. Pat dry the barramundi fillets with a paper towel, and season them with salt and pepper.
  3. In a shallow dish, combine all-purpose flour, cornstarch, and baking powder. Gradually add cold water while whisking until a smooth batter forms.
  4. Heat vegetable oil in a frying pan or deep fryer to about 350°F (175°C).
  5. Dip each barramundi fillet into the batter, ensuring it's coated evenly.
  6. Gently place the battered fillets into the hot oil and fry for about 4-5 minutes on each side or until golden and crispy. Make sure to fry them in batches to avoid overcrowding the pan.
  7. Once the fillets are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
  8. Serve the deep-fried barramundi fillets with the prepared soy sauce dressing drizzled on top.
  9. Garnish with chopped celery, green onions or a sprinkle of sesame seeds for added flavor and visual appeal if desired
