- Start by preparing the dressing. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, grated ginger, and sesame oil. Set it aside to let the flavors meld.
- Pat dry the barramundi fillets with a paper towel, and season them with salt and pepper.
- In a shallow dish, combine all-purpose flour, cornstarch, and baking powder. Gradually add cold water while whisking until a smooth batter forms.
- Heat vegetable oil in a frying pan or deep fryer to about 350°F (175°C).
- Dip each barramundi fillet into the batter, ensuring it's coated evenly.
- Gently place the battered fillets into the hot oil and fry for about 4-5 minutes on each side or until golden and crispy. Make sure to fry them in batches to avoid overcrowding the pan.
- Once the fillets are cooked, transfer them to a plate lined with paper towels to absorb any excess oil.
- Serve the deep-fried barramundi fillets with the prepared soy sauce dressing drizzled on top.
- Garnish with chopped celery, green onions or a sprinkle of sesame seeds for added flavor and visual appeal if desired
