- Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and cook until fragrant, about 2 minutes.
- Add the frozen peas and carrots and cook for an additional 2-3 minutes, or until the vegetables are tender.
- Add the cooked crab meat and stir well to combine.
- Add the cooked rice to the skillet and stir until well combined.
- Drizzle the soy sauce over the rice and stir to combine. Cook for an additional 2-3 minutes, or until the rice is heated through.
- Push the rice mixture to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, and then stir them into the rice mixture.
- Season with salt and pepper to taste and serve hot.
