Ingredients
  

  • 8 oz pasta (such as penne or fusilli)
  • 2 chicken breasts cooked and shredded
  • 1/4 cup fresh tarragon leaves chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/3 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white wine vinegar
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process. Let it cool.
  2. In a large bowl, combine the cooked and shredded chicken, chopped tarragon, cherry tomatoes, and red onion.
  3. In a small bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, salt, and pepper until well combined.
  4. Pour the dressing over the chicken mixture and toss gently to coat everything evenly.
  5. Add the cooked pasta to the bowl and mix well to combine all the ingredients.
  6. Adjust seasoning with salt and pepper if needed.
  7. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld together.
