Bandeja Paisa is a delicious traditional dish from Colombia! It's a hearty and flavorful meal that consists of various ingredients. Picture a large platter filled with white rice, red beans, chorizo sausage, chicharrón (crispy pork belly), fried egg, ripe plantains, avocado, arepa (a cornbread-like flatbread), and sometimes even grilled steak or pork.

Ingredients
  

  • 1 cup white rice
  • 1 cup red beans (cooked or canned)
  • 4 chorizo sausages
  • 1 cup chicharrón (crispy pork belly), chopped into small pieces
  • 4 eggs
  • 2 ripe plantains sliced
  • 1 avocado sliced
  • 4 arepas (cornbread-like flatbread)
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Optional additions:
  • Grilled steak or pork

Method
 

  1. Cook the white rice according to the package instructions.
  2. In a separate pot, warm the red beans over medium heat until heated through. Add salt and pepper to taste.
  3. In a skillet, cook the chorizo sausages until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, fry the chicharrón until crispy. Remove from skillet and set aside.
  5. In a separate skillet, fry the eggs to your desired doneness and set aside.
  6. In a clean skillet, heat vegetable oil over medium-high heat. Fry the plantain slices until golden brown on each side. Remove from skillet and set aside.
  7. If using arepas, warm them in a separate skillet or toaster.
  8. Assemble the Bandeja Paisa on a large platter by arranging the cooked rice, red beans, chorizo sausages, chicharrón, fried eggs, plantains, avocado slices, and arepas.
  9. Optionally, you can also include grilled steak or pork on the platter.
  10. Serve hot and enjoy!
