Aloo Channa Masala is a popular Indian dish made with potatoes (aloo) and chickpeas (channa) cooked in a flavorful blend of spices and tomatoes. It's a delicious and hearty vegetarian dish that is often served with rice or roti.

Ingredients
  

  • 2 cups chickpeas boiled, (canned chickpeas can also be used)
  • 2 medium potatoes peeled and cubed
  • 1 onion finely chopped
  • 2 tomatoes pureed
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tablespoon cumin seeds
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon garam masala
  • Salt to taste
  • 2 tablespoon cooking oil
  • Fresh coriander leaves for garnishing

Method
 

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add minced garlic and grated ginger. Sauté for a minute.
  4. Add turmeric, coriander powder, cumin powder, and salt. Mix well.
  5. Add pureed tomatoes and cook until the oil separates.
  6. Add cubed potatoes and boiled chickpeas. Mix well.
  7. Add water to achieve the desired consistency.
  8. Cover and cook until the potatoes are tender.
  9. Add garam masala and mix well.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with rice or roti.
