Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add minced garlic and grated ginger. Sauté for a minute.
Add turmeric, coriander powder, cumin powder, and salt. Mix well.
Add pureed tomatoes and cook until the oil separates.
Add cubed potatoes and boiled chickpeas. Mix well.
Add water to achieve the desired consistency.
Cover and cook until the potatoes are tender.
Add garam masala and mix well.
Garnish with fresh coriander leaves.
Serve hot with rice or roti.
