The muffins didn’t taste anything like carrot cake and were not sweet enough. I have tried the pumpkin ones in this brand and they were a lot better!

Was a hit with a non-keto crowd!! Even the toddlers loved it and asked for seconds! Made my own sugar free cream cheese frosting to go with.
Used 2 packs, one per layer. Next time I will use 3 packs for 3 layers for a better look.
I will say it’s not as moist as I hoped, but it was not dry by any means. I may add a bit more oil next time.

I thought this was really good. As is always the case with these sorts of things (and maybe recipes in general), I might be inclined to tinker a bit on subsequent attempts, but made essentially according to the package directions, I was more than satisfied.
Could it have a little more carrot flavor? Sure, but that's easily correctable (at the expense of a slightly increased carb count). And I thought the texture was just fine, a bit dry but not unbearably so. Finally, I found the level of sweetness to be just right, with no aftertaste that I noticed. But this is a very personal thing, and since I've been low carb for over 10 years now, I'm not sure I'm the best judge of what real sugar tastes like anymore. The flavor had a tad too much spice for my preference (got a lot of what might these days be termed "pumpkin spice" character to it), but this is a nitpick. Overall, I very much enjoyed it.
Like others, I made a simple cream cheese frosting (cream cheese, butter, a touch of cream, vanilla, allulose) and that went a long way toward making it truly reminiscent of the real thing and boosted the overall sweetness as well. But otherwise, I enjoyed it just as it came.
