FOR THE BEANS:

  • 2 cups red beans or white beans
  • salt to taste

Prepare Beans:

  • Wash the beans under running water.
    Add 6 cups of water into a pot, set on high heat and bring to a boil.
    Add the beans and reduce the heat to medium.
    Leave on low heat for 2 hours 30 minutes or until the beans is very soft.
    Add salt to taste. Mash up the beans if you prefer.

Prepare Sauce:

  • Set the dried peppers into a bowl, pour over some boiling water and leave covered until the peppers are softened. Best result if peppers are soaked overnight.
    In a blender, combine the bell pepper and the soaked peppers with a bit of water. Purée to a coarse texture. Pour the puréed peppers into sieve and leave to rest as to remove excess water.
    Put a pot on the hob and set on medium heat, add the palm oil and wait for the oil to get heated.
    Add the chopped onions, stir until onions is caramelized. The color should be black but not burnt. This should take about 20 to 30 minutes.
    Add the ginger, sieved pepper, crayfish and Maggi (TM) vegetable cubes and stir. Cover and leave to fry for another 15 minutes or until the sauce is dark.
    Sauce is ready to serve.
  • Serve sauce over beans.
