Crispy Meetha Ghughra
Ingredients
- 1 cup all-purpose flour
- 1/4 cup semolina (sooji)
- 1/4 cup ghee or oil
- 1/2 cup grated coconut
- 1/2 cup chopped nuts (almonds, cashews, pistachios)
- 1/2 cup grated jaggery
- 1/2 teaspoon cardamom powder
- Salt to taste
- Oil for frying
- onions chopped for garnish
- coriander leaves for garnish
Instructions
- In a mixing bowl, combine the all-purpose flour, semolina, and ghee. Mix well to form a dough. Add a little water if needed. Cover and let the dough rest for 15-20 minutes.
- In another bowl, mix grated coconut, chopped nuts, grated jaggery, cardamom powder, and a pinch of salt to make the filling.
- Divide the dough into small balls and roll each ball into a small circle.
- Place a spoonful of the filling in the center of each circle and fold it over to form a half-moon shape. Seal the edges by pressing with a fork.
- Heat oil in a pan for frying. Once hot, fry the ghughras in batches until golden brown and crispy.
- Remove the fried ghughras and place them on a paper towel to drain excess oil.
- Garnish the crispy Meetha Ghughra with chopped onions and coriander leaves before serving.
- Enjoy!
