Crispy Meetha Ghughra is an Indian snack made from a sweet and savory filling of jaggery, coconut, nuts, and spices. When garnished with chopped onions and fresh coriander leaves, it adds a unique twist to the traditional recipe, offering a perfect balance of flavors and textures.
In a mixing bowl, combine the all-purpose flour, semolina, and ghee. Mix well to form a dough. Add a little water if needed. Cover and let the dough rest for 15-20 minutes.
In another bowl, mix grated coconut, chopped nuts, grated jaggery, cardamom powder, and a pinch of salt to make the filling.
Divide the dough into small balls and roll each ball into a small circle.
Place a spoonful of the filling in the center of each circle and fold it over to form a half-moon shape. Seal the edges by pressing with a fork.
Heat oil in a pan for frying. Once hot, fry the ghughras in batches until golden brown and crispy.
Remove the fried ghughras and place them on a paper towel to drain excess oil.
