Beef Stifado
Ingredients
- 1.5 pounds beef stew meat cut into chunks
- 4 onions sliced
- 4 cloves garlic minced
- 1 can crushed tomatoes (14 oz)
- 1/2 cup red wine
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 cinnamon stick
- 4 cloves
- 1 bay leaf
- Salt and pepper to taste
- fresh parsley chopped for garnish
Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the beef chunks and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the sliced onions and garlic. Cook until the onions are soft and translucent.
- Return the beef to the pot and add the crushed tomatoes, red wine, red wine vinegar, cinnamon stick, cloves, bay leaf, salt, and pepper. Stir to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2-2.5 hours, or until the beef is tender.
- Taste and adjust the seasoning if needed.
- Serve the Beef Stifado hot, garnished with chopped parsley. It goes well with rice, mashed potatoes, or crusty bread.
- Enjoy!
