- 1 cup semolina (rava)
- 2 tbsp cooking oil
- 1 tsp mustard seeds
- 1 tsp urad Dal (split black gram)
- 1/4 cup peanuts
- 8-10 curry leaves
- 1 onion chopped
- 1 green chili chopped
- 1 carrot finely chopped
- 1/2 cup mixed vegetables (like peas and bell peppers)
- Salt to taste
- 3 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter.
- Add urad dal and peanuts. Fry until the peanuts turn light golden brown.
- Add curry leaves, chopped onion, and green chili. Saute until the onions turn translucent.
- Add chopped vegetables and cook for a few minutes until they are slightly tender.
- In the meantime, roast the semolina in a separate pan until it turns golden brown and aromatic.
- Add the roasted semolina to the pan with the vegetables. Mix well to combine.
- Pour in the water slowly while stirring continuously to avoid lumps.
- Add salt to taste and stir well. Cover and cook on low heat for 5-7 minutes until the upma is cooked and the water is absorbed.
- Garnish with fresh coriander leaves before serving.
