  • 2 pounds sweet potatoes peeled and grated
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup raisins (optional)

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated sweet potatoes, flour, brown sugar, coconut milk, vanilla extract, cinnamon, nutmeg, allspice, and salt. Mix well until all the ingredients are thoroughly combined.
  3. Add the melted butter to the mixture and stir until incorporated. If desired, fold in the raisins for an extra burst of flavor.
  4. Pour the mixture into the greased baking dish and spread it evenly.
  5. Bake in the preheated oven for approximately 1 hour and 30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
