Ingredients
- 1 pound chicken breasts cut into strips
- 1 onion diced
- 2 cloves garlic minced
- 8 oz mushrooms sliced
- 1 cup chicken broth
- 1 cup sour cream
- 2 tablespoons flour
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
- Cooked egg noodles or rice for serving
Instructions
- In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken strips and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onions are translucent.
- Add the sliced mushrooms to the skillet and cook until they release their juices and start to brown.
- Sprinkle the flour over the mushrooms and stir to coat. Cook for another minute to cook out the raw flour taste.
- Gradually stir in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Return the chicken to the skillet and simmer for 5-10 minutes until the sauce has thickened slightly.
- Stir in the sour cream and season with salt and pepper to taste. Cook for another 2-3 minutes.
- Serve the Chicken Stroganoff over cooked egg noodles or rice. Garnish with chopped parsley. Enjoy!
