Chicken meatballs with sweet and sour sauce

Method
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine ground chicken, breadcrumbs, egg, minced garlic, soy sauce, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
- While the meatballs are baking, prepare the sweet and sour sauce. In a saucepan, combine ketchup, apple cider vinegar, brown sugar, and soy sauce. Bring to a simmer over medium heat.
- In a small bowl, mix cornstarch with water to create a slurry. Slowly add the slurry to the sauce, stirring constantly until the sauce thickens.
- Once the meatballs are cooked, transfer them to a serving dish and pour the sweet and sour sauce over the top.
- Garnish with chopped green onions or sesame seeds, if desired.
