Ingredients
  

  • 4 pork chops
  • 2 lemongrass stalks finely chopped
  • 4 cloves of garlic minced
  • 1 teaspoon ginger grated
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 orange zest and juice
  • Salt and pepper to taste
  • 2 cups cooked rice
  • cilantro freshly chopped, for garnish

Method
 

  1. In a bowl, mix together lemongrass, garlic, ginger, soy sauce, honey, orange zest, and orange juice to make the marinade.
  2. Place the pork chops in a shallow dish and pour the marinade over them. Make sure the pork chops are well coated. Marinate for at least 30 minutes, or ideally overnight for the best flavor.
  3. Heat a grill or a pan over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until they are cooked through and nicely charred.
  4. In a small saucepan, heat the remaining marinade over medium heat until it thickens slightly to make the orange sauce.
  5. Serve the grilled pork chops on a bed of cooked rice, drizzle with the orange sauce, and garnish with fresh chopped cilantro.
