Lemongrass Pork Chop with Orange Sauce on rice

- In a bowl, mix together lemongrass, garlic, ginger, soy sauce, honey, orange zest, and orange juice to make the marinade.
- Place the pork chops in a shallow dish and pour the marinade over them. Make sure the pork chops are well coated. Marinate for at least 30 minutes, or ideally overnight for the best flavor.
- Heat a grill or a pan over medium-high heat. Cook the pork chops for about 4-5 minutes on each side, or until they are cooked through and nicely charred.
- In a small saucepan, heat the remaining marinade over medium heat until it thickens slightly to make the orange sauce.
- Serve the grilled pork chops on a bed of cooked rice, drizzle with the orange sauce, and garnish with fresh chopped cilantro.
