Zucchini Herb Bread

Method
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs and olive oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the chopped herbs and grated cheese.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy!
