  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup olive oil
  • 1/4 cup fresh herbs chopped (such as thyme, rosemary, and parsley)
  • 1/2 cup grated cheese (such as Parmesan or cheddar)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the grated zucchini, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the eggs and olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the chopped herbs and grated cheese.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and enjoy!
