Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup olive oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup grated zucchini
  • 1/2 cup grated carrot
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat together the olive oil and brown sugar until well combined.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the pumpkin puree, grated zucchini, grated carrot, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
