Spinach and Ricotta Rolls

Method
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the ricotta cheese, cooked spinach, Parmesan cheese, minced garlic, salt, and pepper. Mix well until all ingredients are combined.
- Roll out the puff pastry on a lightly floured surface and cut it into 4 equal rectangles.
- Spoon the spinach and ricotta mixture onto each rectangle, leaving a border around the edges.
- Roll up each rectangle tightly, starting from the short end, and place them seam side down on the prepared baking sheet.
- Brush the tops of the rolls with the beaten egg to give them a golden finish.
- Bake in the preheated oven for about 20-25 minutes, or until the rolls are puffed and golden brown.
- Remove from the oven and let them cool slightly before serving.
- Enjoy!
