Spinach and Ricotta Rolls are a delicious savory snack or appetizer made with a filling of creamy ricotta cheese, cooked spinach, and seasonings wrapped in puff pastry and baked until golden and crispy. Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 cup ricotta cheese
  • 1 cup cooked spinach chopped and drained
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1 egg beaten (for egg wash)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the ricotta cheese, cooked spinach, Parmesan cheese, minced garlic, salt, and pepper. Mix well until all ingredients are combined.
  3. Roll out the puff pastry on a lightly floured surface and cut it into 4 equal rectangles.
  4. Spoon the spinach and ricotta mixture onto each rectangle, leaving a border around the edges.
  5. Roll up each rectangle tightly, starting from the short end, and place them seam side down on the prepared baking sheet.
  6. Brush the tops of the rolls with the beaten egg to give them a golden finish.
  7. Bake in the preheated oven for about 20-25 minutes, or until the rolls are puffed and golden brown.
  8. Remove from the oven and let them cool slightly before serving.
  9. Enjoy!
