Ingredients
  

  • 4 chicken breasts boneless, skinless cut into bite-sized pieces
  • 1/2 cup peanuts
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 4 green onions chopped
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Cooked white rice for serving

Method
 

  1. In a small bowl, mix together soy sauce, rice vinegar, hoisin sauce, and chili paste. Set aside.
  2. In a separate bowl, toss the chicken pieces with cornstarch until well coated.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through and slightly browned. Remove chicken from the pan and set aside.
  4. In the same pan, add a bit more oil if needed and sauté garlic, ginger, and peanuts for a minute.
  5. Add diced bell peppers and cook for another 2-3 minutes until slightly softened.
  6. Return the cooked chicken to the pan, along with the prepared sauce. Stir well to coat everything evenly and cook for another 2-3 minutes.
  7. Stir in chopped green onions and cook for another minute.
  8. Serve the Gong Bao Chicken over cooked white rice and enjoy!
