Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup Amarula liqueur
  • 1/2 teaspoon vanilla extract
  • powdered sugar for dusting optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a small loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the Amarula liqueur and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, you can dust the top with powdered sugar if desired.
