Persian halva, also known as “halva ardeh,” is a sweet and dense dessert made from tahini (sesame paste), sugar, and often flavored with saffron and rose water. Ingredients
  

  • 1 cup tahini (sesame paste)
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon ground saffron (dissolved in a little warm water)
  • 1 teaspoon rose water
  • Sliced almonds or pistachios for garnish (optional)

Method
 

  1. In a saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely.
  2. Add the tahini to the sugar syrup and mix well.
  3. Cook the mixture over low heat, stirring constantly, until it thickens and starts to pull away from the sides of the pan (about 10-15 minutes).
  4. Add the saffron water and rose water to the mixture and stir to combine.
  5. Remove the pan from the heat and let the halva cool slightly.
  6. Transfer the halva to a serving dish and smooth the top.
  7. Garnish with sliced almonds or pistachios if desired.
  8. Allow the halva to cool completely before serving.
  9. Enjoy!
