Ingredients
  

  • 2 cups grated cassava (yuca)
  • 1 cup coconut milk
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup raisins (optional)

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the grated cassava, coconut milk, brown sugar, cinnamon, nutmeg, salt, melted butter, and raisins (if using). Mix well to combine all the ingredients.
  3. Pour the mixture into the greased baking dish and smooth the top with a spatula.
  4. Bake in the preheated oven for about 45-50 minutes or until the top is golden brown and the pone is set.
  5. Remove from the oven and let it cool slightly before slicing into squares or bars.
  6. Serve your Belizean Cassava Pone warm or at room temperature. Enjoy this delicious traditional dessert!
