Aebleskiver
Ingredients
Method
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the buttermilk and egg yolks until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
- Heat an æbleskiver pan over medium heat and grease each well with butter or oil.
- Fill each well about three-quarters full with batter.
- Cook for 2-3 minutes or until the edges start to set, then use a skewer or fork to flip the æbleskiver and cook for another 2-3 minutes on the other side.
- Repeat with the remaining batter until all æbleskiver are cooked.
- Serve warm with a dusting of powdered sugar and a side of jam.
