Aebleskiver is a traditional Danish treat, often enjoyed during the holiday season. They are round, fluffy pancakes cooked in a special pan with half-spherical molds. Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs separated
  • Butter or oil for greasing the pan
  • Powdered sugar and jam for serving

Method
 

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the buttermilk and egg yolks until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  4. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  5. Heat an æbleskiver pan over medium heat and grease each well with butter or oil.
  6. Fill each well about three-quarters full with batter.
  7. Cook for 2-3 minutes or until the edges start to set, then use a skewer or fork to flip the æbleskiver and cook for another 2-3 minutes on the other side.
  8. Repeat with the remaining batter until all æbleskiver are cooked.
  9. Serve warm with a dusting of powdered sugar and a side of jam.
  10. Enjoy!
