Method
- In a mixing bowl, combine the cottage cheese, egg, sugar, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the cottage cheese mixture, stirring until a soft dough forms.
- Heat the oil in a deep pan or fryer to 350°F (180°C).
- Using a spoon or your hands, shape the dough into small balls and gently flatten them to form doughnuts.
- Carefully place the doughnuts into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the doughnuts from the oil and drain on paper towels.
- Dust the Varškinės spurgos with powdered sugar before serving.
