Varškinės spurgos are Lithuanian curd doughnuts, a delicious fried pastry made with cottage cheese or curd cheese. They are a popular sweet treat in Lithuania, often enjoyed with a sprinkle of powdered sugar or a dollop of jam.

Ingredients
  

  • 1 cup cottage cheese or curd cheese
  • 1 egg
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch salt
  • Oil for frying
  • Powdered sugar for dusting

Method
 

  1. In a mixing bowl, combine the cottage cheese, egg, sugar, and vanilla extract. Mix until well combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the cottage cheese mixture, stirring until a soft dough forms.
  4. Heat the oil in a deep pan or fryer to 350°F (180°C).
  5. Using a spoon or your hands, shape the dough into small balls and gently flatten them to form doughnuts.
  6. Carefully place the doughnuts into the hot oil and fry until golden brown, about 2-3 minutes per side.
  7. Remove the doughnuts from the oil and drain on paper towels.
  8. Dust the Varškinės spurgos with powdered sugar before serving.
  9. Enjoy!
