Ingredients
  

  • 4 medium tomatoes
  • 2-3 jalapeño peppers (adjust to taste)
  • 1 small onion chopped
  • 2-3 garlic cloves
  • 1/4 cup fresh cilantro chopped
  • Salt to taste
  • Lime juice to taste

Method
 

  1. Preheat a dry skillet over medium-high heat. Add the tomatoes and jalapeño peppers to the skillet and roast, turning occasionally, until they are slightly charred on all sides.
  2. Transfer the roasted tomatoes and jalapeños to the molcajete and grind them into a rough paste using the pestle. You can also use a blender if you don’t have a molcajete.
  3. Add the chopped onion, garlic cloves, and cilantro to the molcajete and continue grinding until well combined.
  4. Season the salsa with salt and lime juice to taste. Adjust the seasoning as needed.
  5. Transfer the salsa to a serving bowl and enjoy with your favorite tortilla chips or as a topping for tacos, burritos, or any other dish you like.
