- Preheat a dry skillet over medium-high heat. Add the tomatoes and jalapeño peppers to the skillet and roast, turning occasionally, until they are slightly charred on all sides.
- Transfer the roasted tomatoes and jalapeños to the molcajete and grind them into a rough paste using the pestle. You can also use a blender if you don't have a molcajete.
- Add the chopped onion, garlic cloves, and cilantro to the molcajete and continue grinding until well combined.
- Season the salsa with salt and lime juice to taste. Adjust the seasoning as needed.
- Transfer the salsa to a serving bowl and enjoy with your favorite tortilla chips or as a topping for tacos, burritos, or any other dish you like.
