Berlinerkranser is a traditional Norwegian Christmas cookie. These buttery, delicate cookies are shaped like wreaths and often decorated with sugar sprinkles or almonds. They are typically enjoyed during the holiday season.

Ingredients
  

  • 1 cup unsalted butter softened
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 2 cups all-purpose flour
  • 1/2 teaspoon vanilla extract
  • sprinkles Sugar or sliced almonds for decoration

Method
 

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract to the butter mixture, and mix until well combined.
  4. Gradually add the flour to the mixture and continue mixing until a dough forms.
  5. Shape the dough into small wreaths about 2 inches in diameter and place them on the prepared baking sheet.
  6. Decorate the top of each wreath with sugar sprinkles or sliced almonds.
  7. Bake the Berlinerkranser cookies in the preheated oven for about 12-15 minutes or until they are lightly golden.
  8. Allow the cookies to cool on a wire rack before serving.
  9. Enjoy!
