Spätzle

Spätzle is a type of soft egg noodle or dumpling that is commonly found in German and Austrian cuisine. It is made from a simple batter of flour, eggs, and milk, which is then shaped and boiled until cooked. Ingredients
  

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tablespoon salt
  • Butter for frying

Method
 

  1. In a large mixing bowl, combine the flour and salt.
  2. In a separate bowl, whisk together the eggs and milk.
  3. Gradually pour the egg mixture into the flour mixture, stirring until a smooth batter forms. The batter should be thick and sticky.
  4. Bring a large pot of salted water to a boil.
  5. Using a Spätzle maker, colander with large holes, or a slotted spoon, press the batter through into the boiling water. You can also use a cutting board and knife to scrape small pieces of batter into the water.
  6. Cook the Spätzle for about 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and place in a colander to drain.
  7. In a large skillet, melt some butter over medium heat.
  8. Add the cooked Spätzle to the skillet and sauté until lightly browned.
  9. Serve the Spätzle as a side dish with your favorite sauce or alongside a main dish.
