Pork pupusa is a traditional Salvadoran dish made with a thick corn tortilla stuffed with a savory filling of seasoned ground pork and other ingredients. It's a delicious and popular food in El Salvador and is often served with curtido, a pickled cabbage slaw, and tomato salsa.

Ingredients
  

  • 2 cups masa harina (corn flour)
  • 1 1/4 cups warm water
  • 1/2 pound ground pork
  • 1/2 onion finely chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or queso fresco
  • Vegetable oil for cooking
  • Curtido (pickled cabbage slaw) and tomato salsa for serving

Method
 

  1. In a bowl, mix the masa harina with the warm water to form a pliable dough. Cover and let rest for 10-15 minutes.
  2. In a skillet, cook the ground pork over medium heat until browned. Add the chopped onion, cumin, paprika, salt, and pepper. Cook until the onion is soft and the pork is cooked through. Set aside to cool.
  3. Divide the masa dough into 8 equal portions and roll each portion into a ball.
  4. Flatten each ball into a disc and place a spoonful of the pork mixture and some shredded cheese in the center.
  5. Fold the dough over the filling to enclose it and gently flatten into a disk, about 1/4 inch thick.
  6. Heat a skillet or griddle over medium heat and lightly oil the surface.
  7. Cook the pupusas for about 4-5 minutes on each side, or until golden brown and cooked through.
  8. Serve hot with curtido and tomato salsa on the side.
  9. Enjoy!
