Caldo de res with yucca and plantains
Ingredients
Method
- In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion and garlic, and cook until softened.
- Stir in the chopped tomato and cumin, and cook for a few minutes.
- Add the beef broth and bring to a simmer. Cook for about 1 hour, until the meat is tender.
- Add the carrots, potatoes, yucca, and plantains to the pot. Cook until all the vegetables are tender, about 20-30 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
- Enjoy!
