Caldo de res with yucca and plantains is a delicious and hearty traditional Mexican soup made with beef, yucca (also known as cassava), plantains, vegetables, and spices.

Ingredients
  

  • 1 lb beef stew meat cut into chunks
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots peeled and sliced
  • 2 potatoes peeled and diced
  • 1 yucca root peeled and cut into chunks
  • 2 ripe plantains peeled and sliced
  • 1 tomato chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 cups beef broth
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

  1. In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion and garlic, and cook until softened.
  3. Stir in the chopped tomato and cumin, and cook for a few minutes.
  4. Add the beef broth and bring to a simmer. Cook for about 1 hour, until the meat is tender.
  5. Add the carrots, potatoes, yucca, and plantains to the pot. Cook until all the vegetables are tender, about 20-30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and lime wedges on the side.
  8. Enjoy!
