In a large pot, heat some oil over medium heat. Add the beef stew meat and brown on all sides.
Add the chopped onion and garlic, and cook until softened.
Stir in the chopped tomato and cumin, and cook for a few minutes.
Add the beef broth and bring to a simmer. Cook for about 1 hour, until the meat is tender.
Add the carrots, potatoes, yucca, and plantains to the pot. Cook until all the vegetables are tender, about 20-30 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro and lime wedges on the side.
