Bacon fat scallion pancakes

Method
- In a large mixing bowl, combine the flour and water to form a dough. Knead the dough until smooth, then cover and let it rest for 30 minutes.
- Divide the dough into 4 equal portions and roll each portion into a thin circle on a floured surface.
- Brush each circle of dough with bacon fat and sprinkle with chopped scallions and bacon bits.
- Roll up each circle of dough to form a long cylinder, then coil the cylinder into a round pancake shape. Flatten the pancake with your hands or a rolling pin.
- Heat a bit of vegetable oil in a non-stick skillet over medium heat. Cook each pancake for 2-3 minutes on each side, or until golden brown and crispy.
- Serve the Bacon Fat Scallion Pancakes hot with your favorite dipping sauce or enjoy them on their own.
