Bacon fat scallion pancakes are a delicious and savory twist on traditional scallion pancakes. Instead of using vegetable oil or butter, this recipe calls for bacon fat for added flavor. Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup water
  • 1/2 cup chopped scallions (green onions)
  • 4 slices cooked bacon chopped
  • 2 tablespoons bacon fat
  • 1/2 teaspoon salt
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, combine the flour and water to form a dough. Knead the dough until smooth, then cover and let it rest for 30 minutes.
  2. Divide the dough into 4 equal portions and roll each portion into a thin circle on a floured surface.
  3. Brush each circle of dough with bacon fat and sprinkle with chopped scallions and bacon bits.
  4. Roll up each circle of dough to form a long cylinder, then coil the cylinder into a round pancake shape. Flatten the pancake with your hands or a rolling pin.
  5. Heat a bit of vegetable oil in a non-stick skillet over medium heat. Cook each pancake for 2-3 minutes on each side, or until golden brown and crispy.
  6. Serve the Bacon Fat Scallion Pancakes hot with your favorite dipping sauce or enjoy them on their own.
