Ingredients
  

  • 1 Whole fish (such as sea bass or tilapia), cleaned and scaled
  • 4-5 stalks scallions finely chopped
  • 1 inch ginger julienned
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Place the cleaned and scaled whole fish on a heatproof serving dish that fits in your steamer.
  2. Season the fish with salt and pepper, and scatter half of the chopped scallions and ginger on top of the fish.
  3. In a small saucepan, heat the vegetable oil until hot but not smoking. Carefully pour the hot oil over the remaining chopped scallions and ginger in a heatproof bowl. This will create the scallion oil.
  4. In the same saucepan, heat the soy sauce until just simmering.
  5. Pour the hot soy sauce over the fish.
  6. Steam the fish over high heat for about 10-15 minutes, or until the fish is cooked through.
  7. Carefully pour the scallion oil over the steamed fish.
  8. Drizzle with sesame oil and garnish with fresh cilantro.
  9. Serve hot with steamed rice.
