Steamed fish with scallion oil
Ingredients
Method
- Place the cleaned and scaled whole fish on a heatproof serving dish that fits in your steamer.
- Season the fish with salt and pepper, and scatter half of the chopped scallions and ginger on top of the fish.
- In a small saucepan, heat the vegetable oil until hot but not smoking. Carefully pour the hot oil over the remaining chopped scallions and ginger in a heatproof bowl. This will create the scallion oil.
- In the same saucepan, heat the soy sauce until just simmering.
- Pour the hot soy sauce over the fish.
- Steam the fish over high heat for about 10-15 minutes, or until the fish is cooked through.
- Carefully pour the scallion oil over the steamed fish.
- Drizzle with sesame oil and garnish with fresh cilantro.
- Serve hot with steamed rice.
- Enjoy!
